These cherries are pulped and naturally fermented for 12 hours, allowing the rich flavours to develop without the use of water. After careful hulling and a gentle parchment wash, the beans undergo the traditional Giling Basa process—a wet hulling method exclusive to Sumatra that enhances the coffee's distinct profile.

But the journey doesn’t end there. The green beans are left to dry for five days, then hand-sorted with precision, and allowed to rest for 30 days, ensuring they reach their peak flavour before being shipped. This artisanal approach is overseen by a passionate young processor in Dolok Sangul, whose dedication shines through in every sip.
